Brown Rice Teriyaki Veggie Stir-Fry
INGREDIENTS
1/2 head of broccoli, florets only
1 tablespoon olive oil
1 cup sliced zucchini
1 cup shredded cabbage
1/2 cup sliced fresh mushrooms
1/2 cup chopped onion
1 cup cooked brown rice
1/4 cup grated carrot
Teriyaki sauce and glaze:
¼ cup shoyu, or dark soy sauce
¼ cup mirin (or, sherry, if mirin is not handy)
¼ cup sake
1 Tbsp brown sugar (or, superfine caster sugar, if handy)
DIRECTIONS
1. Heat the teriyaki sauce ingredients gradually till sugar dissolves; off heat, let it cool
2. In a large skillet or wok, heat the oil.
3. Add the zucchini, cabbage, mushrooms and onion;
4. stir-fry for 4-5 minutes or until crisp-tender.
5. add the teriyaki sauce to make a nice glaze
6. Add the rice, broccoli and carrot
7. stir-fry for 2-3 minutes or until heated through
8. Serve hot and Enjoy!
